Description

Extraction of chitosan and its oligomers from shrimp shell waste, their characterization and antimicrobial effect.

Both shrimp head and body shells can be used to extract chitosan, a biopolymer that is soluble in solvents with a pH less than 6.5

  • Process
    The process for extracting chitosan from shrimp shells involves demineralization, deproteinization, and deacetylation: 

    1. Demineralization: Calcium carbonate is converted to calcium chloride, which can be washed away. 
    2. Deproteinization: Sodium hydroxide is used to remove protein. 
    3. Deacetylation: Chitin is deacetylated with sodium hydroxide at high temperatures. 
  • Shrimp heads
    Shrimp heads can be used to recover chitin, protein, and carotenoids. 

  • Shrimp shells
    Shrimp shells are a major source of chitin, containing approximately 15–40% chitin by dry weight. 

  • Environmental impact
    Shrimp shells are a major environmental problem because they are slowly degraded. The seafood processing industry produces millions of tons of shrimp shells each year.
