ProcessThe process for extracting chitosan from shrimp shells involves demineralization, deproteinization, and deacetylation:
- Demineralization: Calcium carbonate is converted to calcium chloride, which can be washed away.
- Deproteinization: Sodium hydroxide is used to remove protein.
- Deacetylation: Chitin is deacetylated with sodium hydroxide at high temperatures.
- Demineralization: Calcium carbonate is converted to calcium chloride, which can be washed away.
